  • Minimum 12 lbs. chocolate needed to run machine, additional is needed for consumption. 7 lbs. of additional chocolate will fee about 100 people but this is dependent on the food being dipped in the chocolate. 3 lbs.= approx. 40 additional people/servings.
  • It is helpful to melt chocolate in double boiler or slowly in microwave and then put into machine. Chocolate can be melted right in the machine but it needs to be done slowly and constantly monitored, start with about 4 cups stirring constantly with a spatula until melted, then slowly add more.
  • One chocolate is melted running temp can vary from 125-170 degrees, usually 125-150. Dial turned all the way to the right is on high. Must monitor constantly to avoid burning/seizing chocolate.
  • Will splatter in the wind, suggested to use indoors or behind a barricade, sidewall, etc.
  • Customer must use chocolate with a high cocoa butter content such as fondue chocolate, regulate chocolate for eating will not work.
  • If using fruit, make sure it is dry, i.e. not freshly washed and dripping with water, if water gets into chocolate it will seize up and not be usable.
